American Baker SP Cake Emulsifier helps create a light, even-textured cake batter by supporting the dispersion of water and fat and the stability of air incorporated during mixing. It is particularly useful in egg-based sponge cakes and cake rolls, where a consistent foam is central to the finished texture.
Technical profile
| Property | Practical meaning |
|---|---|
| Product type | Concentrated cake emulsifier, incorporated into a recipe during mixing. |
| Main task | Help the liquid, fat and aerated phases remain more uniformly dispersed while the batter is prepared. |
| Best-established applications | Egg sponge cakes, egg cakes and rolled sponge sheets; other cakes require a recipe designed for an emulsifier. |
| Measuring basis | Weigh against the complete batter mixture, rather than using the flour weight alone. |
How the emulsifier works
Beating incorporates air into an egg-based batter. The emulsifier helps support a more even dispersion of the ingredients and the air bubbles, making the mixture easier to reproduce from one batch to the next. Mixing speed, ingredient temperature and the recipe still determine the final result. In baking, the cake structure must set before it can support its own weight.
The practical aim is a fine, regular crumb with a stable rise. SP performs a different job from baking powder, which generates leavening gas, and from butter or oil, which contribute fat and tenderness. Use each ingredient in the quantity specified by your recipe.
Dosage: calculate it correctly
American Baker publishes a general SP starting range of 0.5–2% of total mixture weight. This is formulation guidance, rather than a single dose suitable for every cake. Follow the package and a tested recipe for this exact emulsifier.
| Illustration for 1,000 g of total mixture | SP amount |
|---|---|
| 0.5% | 5 g |
| 1% | 10 g |
| 2% | 20 g |
These calculations illustrate the percentage basis; they are not three interchangeable recommendations. Use a gram scale. A spoon measure is less repeatable because how it is filled changes the amount.
Mixing method
- Weigh the complete recipe and the required SP separately. Prepare the tin and preheat the oven according to the recipe before mixing.
- Incorporate SP into the egg or other liquid phase at the stage your recipe specifies. Disperse it evenly before proceeding; a lump left on the bowl wall cannot act throughout the batter.
- Beat to the required aeration and consistency. Follow the prescribed speed and time rather than continuing indefinitely in search of more volume.
- Add flour, fat and other ingredients in the specified sequence. Mix sufficiently to combine while preserving the intended structure.
- Portion and bake according to the recipe. Record ingredient temperatures, mixing settings and bake conditions when comparing trials.
Getting a consistent result
- Dense or uneven crumb: check the weighed dose, dispersion, mixing stage and ingredient temperature before changing the formula.
- Very coarse or crumbly cake: check for excess dose or excessive aeration. Adding more SP is not a universal correction.
- Collapse after baking: also check bake completion, tin fill and cooling method; an emulsifier cannot compensate for every process error.
- Changing the egg quantity: treat this as a recipe reformulation and test it. Do not automatically remove eggs because SP is present.
Ingredients, storage and handling
SP is a prepared food additive. Refer to the original package for the complete emulsifier/additive declaration, any carriers, allergens and batch-specific instructions. An unspecified ingredient list is not evidence that the product is allergen-free.
Use a clean, dry utensil, close the pack promptly and store as stated on the label, away from heat, moisture and direct sunlight. Keep the batch and best-before information for traceability. This concentrated ingredient is for incorporation into food, not for eating directly.
